In the winter of 2016, a new contemporary winery was built in the interest of wine. A high-quality wine workshop characterized by its timeless style and simplicity.
Our grapes are carefully sorted by hand, before and after destemming.
Each year, each of these custom-made concrete vats receives the unique harvest of one of the estate’s climats and each cuvée has a vat related to the size of the yield.
Fermentation in ovoid concrete vats guarantees thermal inertia and optimal vatting.
The bunches are meticulously sorted and de-stemmed manually.

Fully thermo-regulated with an ecological heat pump, the vat house is part of the Château’s sustainable development approach.
Our barrel cellar was also completely renovated in 2017 to reflect this approach. The same attention is paid to aging in order to preserve the singularities of grape varieties and terroirs.
The cellar was completely renovated in 2017 in the same spirit. The wines are matured serenely in French oak barrels. Around 30% are matured in new barrels, another part in « second-fill » barrels. The rest is matured in Clayvers. These latter are small sandstone vats that promote micro-oxygenation and maturity. This approach was born from a desire to produce pure wines, without artifice. The aging period varies from 12 to 20 months depending on the nature of the wines.
